Ingredients

Rice Krispie Treats
  • 6 tablespoons unsalted butter
  • 14 ounces mini marshmallows for melting
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine salt
  • 6 cups crispy rice cereal
  • 2 ounces mini marshmallows fold in at the end for extra gooey texture

Equipment

  • 1 9x13-inch pan lightly greased or lined with parchment
  • 1 large heavy-bottomed pot
  • 1 silicone spatula lightly buttered for pressing

Method

  1. Lightly grease a 9x13-inch pan or line it with parchment paper.
  2. Melt the butter in a large heavy-bottomed pot over low heat.
  3. Add 14 ounces of mini marshmallows, the vanilla extract, and salt. Stir constantly until the marshmallows are fully melted and smooth.
  4. Remove the pot from the heat as soon as the mixture is glossy and melted.
  5. Fold in the crispy rice cereal until evenly coated.
  6. Add the remaining 2 ounces of mini marshmallows and fold briefly to distribute.
  7. Transfer the mixture to the prepared pan and gently press into an even layer with a lightly buttered spatula or buttered hands.
  8. Let cool at room temperature for 30 to 45 minutes, until set enough to slice.
  9. Cut into 12 squares and serve.

Notes

Use low heat to keep the treats soft. Do not press the mixture too firmly into the pan. For extra flavor, brown the butter lightly before adding the marshmallows.
