Ingredients

For the tomato fritters
  • 4 medium Roma tomatoes finely diced
  • 1 teaspoon salt divided
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 teaspoon baking powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 green onions thinly sliced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon jalapeño finely minced, optional
  • 2 to 4 tablespoons milk as needed
  • 3 to 4 tablespoons neutral oil for pan-frying
For the dipping sauce
  • 1/3 cup sour cream or Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon lemon juice
  • 1 pinch salt
  • 1 pinch black pepper

Equipment

  • 1 colander for draining tomatoes
  • 1 mixing bowl medium
  • 1 small bowl for dipping sauce
  • 1 large skillet for pan-frying
  • 1 spatula for flipping fritters

Method

Prepare the tomatoes
  1. Place the diced Roma tomatoes in a colander or bowl, sprinkle with 1/2 teaspoon of the salt, and let them sit for 10 minutes to release excess moisture.
  2. Gently press the tomatoes with paper towels or the back of a spoon to remove as much liquid as possible.
Make the batter and sauce
  1. In a medium mixing bowl, whisk together the eggs, flour, cornmeal, baking powder, remaining 1/2 teaspoon salt, black pepper, and garlic powder.
  2. Stir in the green onions, parsley, and jalapeño if using.
  3. Fold the drained tomatoes into the batter. Add milk 1 tablespoon at a time if needed until the mixture is thick and spoonable.
  4. In a small bowl, stir together the sour cream or Greek yogurt, mayonnaise, ketchup, lemon juice, and a pinch of salt and pepper. Refrigerate until ready to serve.
Cook the fritters
  1. Heat 2 tablespoons of oil in a large skillet over medium heat.
  2. Drop heaping tablespoons of batter into the skillet and gently flatten each one slightly with the back of a spoon.
  3. Cook in batches for 3 to 4 minutes per side, until golden brown and cooked through, adding more oil between batches as needed.
  4. Transfer the fritters to a paper towel-lined plate or wire rack and serve warm with the dipping sauce.

Notes

Drain the tomatoes well for the crispiest fritters. Keep the batter thick and spoonable, and cook over medium heat so the centers set before the outside gets too dark. Best served fresh and warm.
