Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon fine salt
  • 1 teaspoon baking soda use 1/2 teaspoon
Butter and Dairy
  • 1/2 cup unsalted butter very cold and cut into cubes
  • 3/4 cup sourdough discard
  • 1/2 cup buttermilk cold
  • 1 tablespoon melted butter optional, for brushing after baking

Equipment

  • 1 large mixing bowl
  • 1 whisk
  • 1 pastry cutter or use fingertips
  • 1 measuring cups and spoons
  • 1 biscuit cutter round cutter
  • 1 baking sheet lined with parchment paper or use a cast iron skillet

Method
 

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly grease a cast iron skillet.
  2. In a large bowl, whisk together the flour, baking powder, sugar, salt, and baking soda.
  3. Add the cold cubed butter and cut it into the flour mixture with a pastry cutter or your fingertips until crumbly with some pea-sized pieces remaining.
  4. In a small bowl or measuring cup, stir together the sourdough discard and cold buttermilk.
  5. Pour the wet mixture into the dry ingredients and stir gently just until a shaggy dough forms. Do not overmix.
  6. Turn the dough onto a lightly floured surface and pat it into a rectangle about 1 inch thick.
  7. Fold the dough in half, gently pat it out again, and repeat the folding process 2 to 3 times to create layers.
  8. Pat the dough to about 1-inch thickness and cut out 8 biscuits with a round biscuit cutter, pressing straight down without twisting.
  9. Place the biscuits on the prepared baking sheet or skillet with the sides just barely touching.
  10. Bake for 13 to 15 minutes, until the tops are golden brown and the biscuits are puffed and set.
  11. Brush with melted butter if desired. Cool for a few minutes and serve warm.

Notes

Keep the butter, discard, and buttermilk cold for the flakiest texture. Do not overmix the dough. Press the cutter straight down without twisting for better rise. Bake until golden and fully set in the center.
