Ingredients
  

For the breakfast pizza bagels
  • 4 plain bagels split in half
  • 6 large eggs
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces breakfast sausage cooked and crumbled
  • 1 1/2 cups mozzarella cheese shredded
  • 2 tablespoons butter
  • 2 tablespoons green onions chopped, optional for serving

  • 1 large skillet
  • 1 medium mixing bowl
  • 1 whisk
  • 1 spatula

Method
 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked, breaking it into small crumbles. Transfer to a plate and set aside.
  3. In a medium bowl, whisk together the eggs, milk, salt, and black pepper until smooth.
  4. Wipe out the skillet if needed and melt the butter over medium-low heat. Add the egg mixture and cook, stirring often, until the eggs are softly scrambled and just set. Remove from the heat.
  5. Arrange the bagel halves cut-side up on the prepared baking sheet. For a crisper base, pre-toast them in the oven for 2 to 3 minutes if desired.
  6. Divide the scrambled eggs evenly over the bagel halves, then top with the cooked sausage.
  7. Sprinkle the shredded mozzarella evenly over each bagel half.
  8. Bake for 8 to 10 minutes, until the cheese is melted and bubbly and the bagel edges are toasted.
  9. Let cool briefly, garnish with chopped green onions if using, and serve warm.

Notes

Softly scramble the eggs so they stay tender after baking. Pre-cook the sausage and eggs ahead for faster morning assembly. Reheat leftovers until hot throughout before serving.
