- Preheat the oven to 425°F. Line a large sheet pan with parchment paper if desired.
- Peel and cube the sweet potatoes into 1-inch chunks. Core and slice the apples into thick wedges, and cut the red onion into wedges.
- Add the sweet potatoes, apples, red onion, and sausage slices to the sheet pan. Drizzle with olive oil and maple syrup, if using.
- Sprinkle the pan with chopped sage, garlic powder, kosher salt, black pepper, and smoked paprika.
- Toss everything together until evenly coated, then spread into a single layer.
- Roast for 20 minutes.
- Remove the pan, stir and flip the ingredients, then return to the oven and roast for 12 to 15 minutes more, until the sweet potatoes are tender and the sausage is browned.
- Taste and adjust seasoning if needed. Garnish with a few whole sage leaves and serve warm.
Notes
Use a large sheet pan so the ingredients roast instead of steam. Firm apples like Honeycrisp or Pink Lady work best. If using raw sausage, cook until fully done before serving. A splash of balsamic or apple cider vinegar at the end adds brightness.
