Ingredients
  

Dough
  • 1 cup warm milk about 105°F to 110°F
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/3 cup pumpkin puree pure pumpkin, not pie filling
  • 1 large egg
  • 1 egg yolk
  • 1/4 cup unsalted butter melted
  • 3 3/4 to 4 cups all-purpose flour
  • 1 teaspoon salt
Pumpkin Filling
  • 1/2 cup unsalted butter very soft
  • 3/4 cup brown sugar packed
  • 1/3 cup pumpkin puree
  • 1 tablespoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
Cream Cheese Icing
  • 4 ounces cream cheese softened
  • 2 tablespoons unsalted butter softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 to 2 tablespoons milk as needed for consistency

Method
 

Make the Dough
  1. In a large mixing bowl, stir together the warm milk, active dry yeast, and granulated sugar. Let sit for 5 to 10 minutes until foamy.
  2. Add the pumpkin puree, egg, egg yolk, melted butter, and salt. Mix to combine.
  3. Gradually add the flour until a soft dough forms. Knead by hand or with a stand mixer for 8 to 10 minutes, until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover, and let rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
Prepare the Filling and Shape
  1. In a small bowl, mix the softened butter, brown sugar, pumpkin puree, cinnamon, pumpkin pie spice, and salt into a spreadable paste.
  2. Punch down the dough and roll it out on a lightly floured surface into a 14 by 18-inch rectangle.
  3. Spread the filling evenly over the dough, leaving a small border around the edges.
  4. Starting from a long side, roll the dough tightly into a log. Slice into 12 even rolls.
  5. Arrange the rolls in a greased 9x13-inch baking dish. Cover and let rise for 30 to 45 minutes, until puffy.
Bake and Ice
  1. Preheat the oven to 350°F.
  2. Bake the rolls for 22 to 25 minutes, until lightly golden and cooked through.
  3. Let the rolls cool for about 10 minutes.
  4. Beat together the cream cheese, softened butter, powdered sugar, vanilla extract, and enough milk to make a thick, spreadable icing.
  5. Spread the icing over the warm rolls and serve.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Do not overflour the dough; it should feel soft and slightly tacky. For overnight rolls, refrigerate after shaping, then let rise at room temperature before baking. Store iced rolls in the refrigerator and reheat gently before serving.
