Ingredients
  

For the pizza bites
  • 1 can refrigerated biscuit dough 8 biscuits
  • 1/2 cup pizza sauce plus extra for dipping if desired
  • 1 cup mozzarella cheese shredded
  • 1/2 cup pepperoni diced
  • 1 tbsp olive oil
  • 1/2 tsp Italian seasoning
  • 2 tbsp Parmesan cheese grated
  • cooking spray for greasing the pan
  • red pepper flakes optional, for serving

Equipment

  • 1 mini muffin pan 24-cup
  • 1 mixing spoon for sauce
  • 1 pastry brush optional, for oiling edges
  • 1 knife for cutting biscuit dough and pepperoni

Method
 

  1. Preheat the oven to 375°F and lightly grease a 24-cup mini muffin pan with cooking spray.
  2. Separate the biscuit dough and cut each biscuit into 3 equal pieces to make 24 portions.
  3. Press each dough piece into a mini muffin cup, shaping it slightly up the sides.
  4. Spoon about 1 teaspoon of pizza sauce into each dough cup.
  5. Top each cup with a small amount of shredded mozzarella and a few pieces of diced pepperoni.
  6. Add the remaining mozzarella, then lightly brush the exposed dough edges with olive oil.
  7. Sprinkle the tops with Italian seasoning and grated Parmesan cheese.
  8. Bake for 10 to 12 minutes, until the cheese is melted and the edges are golden brown.
  9. Cool in the pan for 3 to 5 minutes, then carefully remove and serve warm with extra pizza sauce if desired.

Notes

Do not overfill with sauce or the bites may turn soggy. Finely diced pepperoni works best for even topping. Reheat leftovers in the oven or toaster oven for the best texture.
