Ingredients
  

Energy Balls
  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup creamy peanut butter
  • 1/3 cup honey
  • 1/4 cup ground flaxseed
  • 1/4 cup mini chocolate chips
  • 1 teaspoon vanilla extract
  • 1 tablespoon sprinkles plus more for topping if desired
  • 1 to 2 tablespoons milk as needed for texture
  • 1 pinch salt

Equipment

  • 1 medium mixing bowl
  • 1 spoon or spatula for mixing
  • 1 measuring cups and spoons
  • 1 small cookie scoop optional for even portions

Method
 

  1. In a medium mixing bowl, stir together the rolled oats, ground flaxseed, mini chocolate chips, sprinkles, and salt.
  2. Add the peanut butter, honey, and vanilla extract. Mix until a thick, sticky mixture forms.
  3. If the mixture seems dry or crumbly, mix in 1 tablespoon of milk. Add a little more only if needed until the mixture holds together when pressed.
  4. Cover and refrigerate the mixture for 15 minutes to make it easier to roll.
  5. Scoop about 1 tablespoon of mixture at a time and roll into balls with clean hands.
  6. If desired, gently press a few extra sprinkles onto the tops of the balls.
  7. Place the energy balls on a tray or plate and chill for 10 to 15 minutes before serving.

Notes

Use old-fashioned oats for the best texture. Chill the mixture before rolling for easier shaping. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months. If packing for school, confirm peanut policies first.
