- Toast or heat the mini waffles according to the package directions until warmed through and lightly crisp on the outside.
- Let the waffles cool for 1 to 2 minutes so the filling stays in place more easily.
- Spread about 1 tablespoon of peanut butter onto the flat side of 4 waffles.
- If using cinnamon or honey, stir them into the peanut butter first or sprinkle the cinnamon lightly over the spread.
- Arrange banana slices in a single layer over the peanut butter, keeping them slightly away from the edges.
- Top with the remaining 4 waffles and press gently to make sandwiches.
- Cut each sandwich into halves or triangles and serve right away.
Notes
Use whole grain waffles for extra fiber. For a nut-free version, substitute sunflower seed butter. These are best served shortly after assembling because the bananas soften over time.
