Ingredients
  

For the waffle sandwiches
  • 8 mini waffles
  • 1/2 cup creamy peanut butter
  • 2 medium bananas sliced into thin rounds
  • 1/4 teaspoon ground cinnamon optional
  • 1 teaspoon honey or maple syrup optional

Equipment

  • 1 toaster or toaster oven for heating the waffles
  • 1 butter knife or small spatula for spreading peanut butter
  • 1 cutting board for slicing bananas
  • 1 knife for slicing and cutting sandwiches

Method
 

  1. Toast or heat the mini waffles according to the package directions until warmed through and lightly crisp on the outside.
  2. Let the waffles cool for 1 to 2 minutes so the filling stays in place more easily.
  3. Spread about 1 tablespoon of peanut butter onto the flat side of 4 waffles.
  4. If using cinnamon or honey, stir them into the peanut butter first or sprinkle the cinnamon lightly over the spread.
  5. Arrange banana slices in a single layer over the peanut butter, keeping them slightly away from the edges.
  6. Top with the remaining 4 waffles and press gently to make sandwiches.
  7. Cut each sandwich into halves or triangles and serve right away.

Notes

Use whole grain waffles for extra fiber. For a nut-free version, substitute sunflower seed butter. These are best served shortly after assembling because the bananas soften over time.
