Prepare the Dough
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, stir together the rolled oats, whole wheat flour, baking soda, cinnamon, and salt.
- In a medium bowl, whisk the melted butter, maple syrup, egg, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Fold in the grated apple and grated carrot. Stir in the raisins and chopped walnuts, if using.
- Let the dough rest for 5 minutes so the oats can absorb some moisture.
Shape and Bake
- Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheet, spacing them slightly apart.
- Gently flatten each mound with the back of a spoon.
- Bake for 12 to 14 minutes, until the cookies are set and lightly golden around the edges.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Optional Drizzle
- Whisk together the powdered sugar, milk, and vanilla until smooth, then drizzle lightly over the cooled cookies.
Notes
Finely grate the apple and carrot for the best texture. Lightly squeeze excess moisture from juicy apple before mixing. These cookies do not spread much, so flatten before baking. Store cooled cookies in an airtight container, and skip the drizzle for easier lunchbox packing.
