Method
- Heat a large skillet over medium heat and add the olive oil.
- Add the ground turkey and diced onion. Cook for 6 to 8 minutes, breaking up the meat, until the turkey is browned and the onion is softened.
- Stir in the sweet potatoes, garlic, salt, pepper, paprika, dried thyme, and crushed red pepper flakes if using.
- Pour in the chicken broth or water and stir well. Cover and cook over medium-low heat for 10 to 12 minutes, stirring once or twice, until the sweet potatoes begin to soften.
- Uncover and add the chopped kale. Stir until the greens wilt and the sweet potatoes are fork-tender, about 3 to 5 minutes more. Add a small splash of broth if needed.
- Sprinkle the shredded cheese evenly over the top.
- Cover for 2 to 3 minutes, or broil briefly if the skillet is broiler-safe, until the cheese is melted and bubbly.
- Top with chopped parsley if desired and serve warm.
Notes
Cut the sweet potatoes into small cubes so they cook evenly. Spinach can replace kale for a softer texture. Watch carefully if using the broiler so the cheese does not burn.
