Method
- Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
- Finely shred the zucchini. If it is extremely wet, lightly pat away excess moisture, but do not squeeze it completely dry.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and glossy.
- Add the eggs and vanilla extract and whisk until fully combined.
- Add the cocoa powder, flour, baking powder, and salt. Stir gently until mostly combined.
- Add the shredded zucchini and milk, then fold until the batter is thick and smooth. Stir in the chocolate chips and walnuts if using.
- Spread the batter evenly into the prepared pan and smooth the top.
- Bake for 28 to 32 minutes, until the top is set and a toothpick inserted near the center comes out with moist crumbs.
- Cool the brownies completely in the pan before slicing into 12 squares and serving.
Notes
For the fudgiest texture, shred the zucchini finely and do not remove all its moisture. Do not overbake; the brownies should still have moist crumbs in the center. Optional walnuts can be omitted for a nut-free batch.
