Frozen Yogurt Bark

A quick and refreshing frozen snack made with Greek yogurt, berries, and granola.

Ingredients
  

Yogurt Base
  • 2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
Toppings
  • 1 cup strawberries sliced
  • 1/2 cup blueberries
  • 1/3 cup granola

Equipment

  • 1 small baking sheet or tray freezer-safe
  • 1 parchment paper
  • 1 medium mixing bowl
  • 1 spoon or spatula for spreading

Method
 

  1. Line a small baking sheet, tray, or shallow freezer-safe dish with parchment paper.
  2. In a medium bowl, stir together the Greek yogurt, honey or maple syrup, and vanilla extract until smooth.
  3. Spread the yogurt mixture into an even layer about 1/4 to 1/2 inch thick on the prepared tray.
  4. Top evenly with sliced strawberries, blueberries, and granola. Gently press the toppings into the yogurt.
  5. Freeze until completely firm, about 4 hours.
  6. Lift the bark out using the parchment paper and break or cut into 8 pieces.
  7. Serve immediately or store the pieces in a covered freezer-safe container until ready to eat.

Notes

Use thick Greek yogurt for the best texture. Pat fruit dry before adding to reduce ice crystals. Store in the freezer and serve straight from frozen for best results.
