Cook the egg roll in a bowl
- Heat the sesame oil in a large skillet over medium-high heat.
- Add the ground pork and cook for 5 to 7 minutes, breaking it up with a spoon, until browned and cooked through. Drain excess grease if needed.
- Add the diced onion and cook for 2 to 3 minutes until softened.
- Stir in the minced garlic and grated ginger. Cook for about 30 seconds, just until fragrant.
- Add the coleslaw mix and shredded carrots. Toss well to combine with the meat mixture.
- Pour in the soy sauce and rice vinegar. Stir and cook for 5 to 7 minutes, stirring occasionally, until the cabbage is tender but still slightly crisp.
- Drizzle in the toasted sesame oil and stir in the sliced green onions.
- Taste and season with salt and black pepper as needed. Serve hot with optional sesame seeds, sriracha, and extra green onions.
Notes
Use bagged coleslaw mix to save prep time. Ground pork gives the most classic flavor, but turkey or chicken work well too. Do not overcook the cabbage if you want the best texture. Refrigerate leftovers promptly and use within 4 days.
