Ingredients
  

Pork
  • 1.5 lb pork tenderloin trimmed
Seasoning
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried Italian seasoning
  • 1 tbsp Dijon mustard
For Serving
  • 1 tbsp fresh parsley chopped, for garnish

Equipment

  • 1 Oven
  • 1 Baking dish or oven-safe skillet
  • 1 small bowl for mixing seasoning
  • 1 instant-read thermometer recommended

Method
 

  1. Preheat the oven to 425°F. Lightly grease a baking dish, oven-safe skillet, or small roasting pan.
  2. Pat the pork tenderloin dry with paper towels.
  3. In a small bowl, stir together the olive oil, salt, black pepper, garlic powder, onion powder, paprika, Italian seasoning, and Dijon mustard to form a paste.
  4. Rub the seasoning mixture evenly all over the pork tenderloin.
  5. Place the tenderloin in the prepared pan and bake for 20 to 25 minutes, or until the thickest part reaches 145°F on an instant-read thermometer.
  6. Remove the pork from the oven and let it rest for 5 to 10 minutes before slicing.
  7. Slice into medallions, spoon the pan juices over the top, garnish with chopped parsley, and serve warm.

Notes

Use an instant-read thermometer for best results and avoid overcooking. Pork tenderloin is different from pork loin and cooks much faster. Let the meat rest before slicing to keep it juicy.
