- Wash and dry the apples well. Slice each apple into wedges, then trim away the core and seeds.
- Brush or toss the apple slices lightly with lemon juice to help slow browning.
- Arrange the apple wedges on a plate, tray, or serving board.
- Spread a small spoonful of peanut butter onto the cut side of each apple slice.
- Sprinkle granola over the peanut butter so it sticks evenly.
- Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 15-second bursts, stirring between each one, until smooth and melted. Alternatively, melt gently over a double boiler.
- Drizzle the melted chocolate over the apple bites.
- Serve immediately, or chill for 5 to 10 minutes to let the chocolate set slightly before serving.
Notes
Use crisp apples for the best texture. For a peanut-free version, substitute sunflower seed butter if appropriate. These are best assembled just before serving for maximum crunch.
