Ingredients
  

Banana Bites
  • 3 medium bananas ripe but firm, sliced into 1/2-inch rounds
  • 1 1/2 cups dark chocolate chips or chopped dark chocolate
  • 1 tablespoon coconut oil
Optional Toppings
  • 2 tablespoons peanut butter for drizzling
  • 2 tablespoons peanuts finely chopped
  • 1 tablespoon unsweetened shredded coconut
  • 1 pinch flaky sea salt optional

Equipment

  • 1 small tray or baking sheet must fit in freezer
  • 1 parchment paper
  • 1 microwave-safe bowl or heatproof bowl
  • 1 fork for dipping
  • 1 knife for slicing bananas

Method
 

  1. Line a small tray, plate, or baking sheet with parchment paper.
  2. Slice the bananas into 1/2-inch rounds and arrange them in a single layer on the prepared tray.
  3. Freeze the banana slices for about 45 minutes, or until firm.
  4. Place the dark chocolate and coconut oil in a microwave-safe bowl and melt in 20-second intervals, stirring between each, until smooth.
  5. If using peanut butter, warm it briefly until it is easy to drizzle.
  6. Dip each frozen banana slice into the melted chocolate, letting the excess drip off, then place it back on the parchment-lined tray.
  7. Immediately sprinkle with chopped peanuts, shredded coconut, or flaky sea salt if desired.
  8. Repeat with the remaining banana slices, reheating the chocolate briefly if needed to keep it smooth.
  9. Drizzle with softened peanut butter if using.
  10. Freeze for 15 to 20 minutes more, until the chocolate coating is fully set, then serve.

Notes

Use firm ripe bananas for the cleanest slices. Keep banana pieces cold while dipping so the chocolate sets quickly. Store in a freezer-safe container for up to 2 weeks for best texture.
