Ingredients

For the batter
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 4 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups carrots finely shredded
  • 1/2 cup pecans or walnuts chopped
For the topping
  • 3/4 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 1/4 cups water very hot

Equipment

  • 1 9x13-inch baking dish or similar 3-quart casserole dish
  • 1 large mixing bowl
  • 1 small bowl for topping
  • 1 whisk
  • 1 spatula or spoon for mixing and spreading

Method

Prepare the batter
  1. Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Add the milk, melted butter, and vanilla extract and stir just until combined.
  4. Fold in the finely shredded carrots and chopped pecans or walnuts. The batter will be thick.
  5. Spread the batter evenly into the prepared baking dish.
Add the topping and bake
  1. In a small bowl, mix together the brown sugar, granulated sugar, and cinnamon for the topping.
  2. Sprinkle the topping evenly over the batter without stirring it in.
  3. Carefully pour the very hot water evenly over the top. Do not stir.
  4. Bake for 40 to 45 minutes, until the top is golden brown and set and the sauce is bubbling around the edges.
  5. Let the cobbler rest for 10 to 15 minutes before serving.
  6. Spoon into bowls and serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Use freshly shredded carrots for the best texture. Do not stir after adding the topping and hot water, as this creates the cobbler sauce layer. Serve warm for the best gooey texture.
